I'm trying to display DockableContent based on the user's selection from a menu. 
Is it possible to create a seperate xml/.cs class for a specific Dockable Content?   Which I could then pass to the dockingManager.Show call?

yes, it makes sense.
DockableContent is simply a ContentControl so you can create an UserControl with VS, change the base class from UserControl to DockableContent and that's it.
